Colombian Flor del Desierto Coffee Beans – Huila, Colombia

Roasted fresh at our small-batch coffee roastery just south of Cambridge, this Colombian coffee is a great example of why beans from Huila are so consistently loved by specialty coffee drinkers.

Flor del Desierto — meaning “Flower of the Desert” — is sourced through the Cuatro Vientos network of carefully selected farms in Acevedo, Huila. The coffee is processed and dried at the Siete Soles Drying Complex, a 6,000 m² specialty coffee facility dedicated to improving drying methods, consistency, and sustainability across the region.

The result is a beautifully balanced Colombian coffee with rich chocolate sweetness, soft fruit notes, and a bright, lively acidity.

This coffee really shines when brewed without milk. If you enjoy pour-over, filter coffee, Aeropress or cafetière, you’ll get a full, rounded cup with plenty of sweetness and clarity.

Roaster’s Notes

This coffee rewards a careful roast profile. The aim is to highlight its natural sweetness while preserving the bright acidity that makes Huila coffees so distinctive.

Our roasting approach focuses on building sweetness through a steady roast curve while maintaining clarity in the cup.

Key stages include:

• Moderate heat through the drying phase
• Controlled Maillard development to build body and sweetness
• Increased airflow approaching first crack
• Slight heat reduction before first crack with a 15–20% development time

By slowing the roast slightly toward the end, we bring out more syrupy chocolate flavours without flattening the fruit acidity.


Target Roast Profile

Charge Temperature: 220°C
Roast Duration: 9–10 minutes
First Crack: ~9:00 at 208°C
Drop Temperature: 220°C
