Roasting schedules and our bean buying policy

Coffee roasting schedules

We roast our coffee two times a week.  Occasionally your order may miss the next roasting schedule in that week.  If you need your coffee urgently then please update the notes section in your coffee order.

Coffee Buying Policies

We carefully select the coffees that we purchase. We use reputably importers and have access to hundreds of coffees.  As a small roastery we can't stock too many beans so we have tight coffee bean buying policy to ensure best quality coffee is roasted and posted to our customers.

Our buying polices are summarised below:

Coffee bean buying policy (Single Origin)

  • SCAA score of 80 or above
  • Zero category one defects, five or less category two defects per 350 grams
  • Have at least one distinctive flavour, aroma, acidity or body
  • Zero tolerance on faults
  • No quakers

Coffee bean buying policy (Blended Coffee)

  • Less than 8 defects per 350 grams
  • Have at least one distinctive flavour, aroma, acidity or body
  • Zero tolerance on faults
  • No more than 3 quakers

Coffee beans - example of primary defects (SCAA)

Quaker - a bean that is not fully developed.  Often only apparent after the bean has been roasted

Black Bean - black or dark coloured beans caused by a number factors including over ripened cherries or poor processing

Sour bean - typically processing or harvesting related. Creates a nasty taste in the cup

Stones / Sticks - sticks and stones may break your bones but they also break grinders which are not the last time I checked covered by the NHS

Coffee beans - example of secondary defects (SCAA)

Insect damaged - as the name suggests the beans have been attacked by insects!  Marginal affect on flavour apart from these will roast more quickly that normal beans

Shelled beans - beans that don't have a centre and roast too quickly resulting in an over-roasted taste in the cup
