Cupping and tasting notes
Clean aroma. Bright acidity. Citrus with milk chocolate with a hint of cherry.
This is a smaller bean and will absorb heat quickly. We aim to get moderate heat into the bean before dry end and progress towards first crack at around 9 minutes. We use a shorter development time (20%) and drop the beans before 11 minutes.
This profile accentuates the acidity in the cup as we feel this is the better aspect of this particular bean.
